- 1 kg Bell Peppers
- 250 g Spinach
- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- - Red Chilli
- 200 ml Mustard Oil
- 50 g Cumin Powder
- 20 g Turmeric Powder
- 100 g Salt
- - Coriander Powder
Instructions
- 1. Preheat your oven to 180°C and prepare a baking tray with parchment paper.
- 2. Wash and cut the tops off the bell peppers, removing seeds and membranes.
- 3. Cook the lentils in boiling water until tender, about 15 minutes, and drain well.
- 4. Heat oil in a pan and sauté chopped onion, garlic, and ginger until fragrant.
- 5. Add chopped tomatoes and cook until softened, forming a thick base.
- 6. Stir in the cumin, turmeric, chili powder, and coriander, mixing well.
- 7. Add spinach to the pan, letting it wilt, then mix in the cooked lentils.
- 8. Season with salt and cook for 3-4 minutes, ensuring all flavors combine.
- 9. Stuff the prepared bell peppers with the lentil-spinach mixture, packing firmly.
- 10. Place stuffed peppers on the baking tray and bake for 20 minutes at 180°C.
- 11. Garnish with chopped cilantro before serving hot with a side of chutney.
