Ingredients
- 25G Fisherman'S Friend Sugar Free Mouth Freshener - Lemon (25g)
- 250 ml Lemon Juice Concentrate
- - Coriander Powder
- 100 g Garlic
- 20 g Turmeric Powder
- - Red Chilli
- 100 g Salt
- 200 ml Coconut Milk
- 1 kg Basmati Rice
- 1pc Watermelon
- 100G Oleo
- 100 g Jeera
Instructions
- 1. Rinse the fish fillets and pat them dry with a kitchen towel.
- 2. In a small bowl, mix lemon juice, turmeric, red chili powder, garlic paste, and salt to prepare a marinade.
- 3. Coat the fish fillets evenly with the marinade and let them sit for 15 minutes.
- 4. Heat oil in a pan and add cumin seeds, letting them splutter for a few seconds.
- 5. Add the marinated fish fillets and cook each side for 4-5 minutes until golden brown.
- 6. Rinse the basmati rice and soak it in water for 10 minutes.
- 7. In a saucepan, combine coconut milk, water, and soaked rice and bring to a gentle boil.
- 8. Reduce the heat and simmer the rice for 10-12 minutes until fully cooked and fluffy.
- 9. Finely chop the coriander leaves and sprinkle them over the cooked fish for garnish.
- 10. Plate the fish fillets alongside the coconut rice and serve warm.
