Lamb Kofta Curry With Saffron Rice Recipe

Succulent lamb koftas simmered in a rich spiced curry served alongside fragrant saffron-infused basmati rice for a comforting dinner.
Ingredients
- 100 g Coriander Leaves
- - Besan
- 1 piece Bottle Gourd
- 200 g Table Salt
- 100 g Jeera
- - Red Chilli Powder
- 500 Ml Champion Oil
- 1 kg Basmati Rice
- 500 g Onion
- 1 Kg Kissan Tomato Puree
- 100 g Garlic
- loose Ginger
- 250g Green Chilli
- 50 g Cumin Powder
- - Red Chilli
- 20 g Turmeric Powder
- 45 g Garam Masala
- - Coriander Powder
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. In a mixing bowl, combine ground lamb with half of the ginger, garlic, cumin, coriander, and chili powder. Mix well and shape into small koftas.
- 2. Heat oil in a pan and gently fry the koftas until browned on all sides, then set them aside.
- 3. In the same pan, sauté diced onions, remaining ginger, garlic, and green chili until golden and aromatic.
- 4. Add tomato puree, turmeric, remaining spices, and salt, cooking until the oil separates from the masala.
- 5. Return the koftas to the pan and gently coat them with the curry base.
- 6. Pour in water, cover, and simmer for 15 minutes until the koftas are cooked through and the sauce thickens.
- 7. Meanwhile, rinse the basmati rice and soak it for 15 minutes.
- 8. Boil water with saffron strands and a pinch of salt, then add the soaked rice.
- 9. Cook the rice until tender, then drain and fluff with a fork.
- 10. Garnish the kofta curry with fresh coriander leaves and serve with saffron rice.
