  • 250 G Onion Shallots 300g
  • 250 G Bwfo Ginger Root Dried Cut
  • 50G Black Garlic Cloves, 50G
  • - Cofresh Whole Green Chilli 350g
  • 1 Bunch Coriander - Bunch
  • 25G Natco Mint
  • 100G Trs Dhania Powder (Indori) 100G
  • 100 G Trs Ground Cumin Jeera Powder
  • 100G Tata Sampann Garam Masala Tata Sampann Garam Masala, 45g
  • 400G Greenfield Himalayan Salt Fine 400G
  • 1 Ltr Ktc Sunflower Oil

Instructions

  1. 1. Soak saffron threads in warm milk for 10 minutes to release their aroma and color.
  2. 2. Cook the basmati rice until it's 70% done, then drain and set aside.
  3. 3. Finely chop the onion, ginger, garlic, green chili, coriander, and mint leaves.
  4. 4. In a bowl, mix lamb mince with ginger, garlic, green chili, coriander powder, cumin powder, garam masala, and salt. Form into small koftas.
  5. 5. Heat sunflower oil in a pan and fry the koftas until browned on all sides. Remove and set aside.
  6. 6. In the same pan, add ghee and sauté onions until golden brown.
  7. 7. Add turmeric powder, cloves, cardamom pods, bay leaves, and cinnamon stick to the pan. Stir for 1 minute until fragrant.
  8. 8. Layer the partially cooked rice in the pan over the spices and onions.
  9. 9. Place the lamb koftas evenly on top of the rice layer.
  10. 10. Drizzle the saffron milk over the rice and koftas.
  11. 11. Cover the pan tightly and cook on a low heat for 20 minutes, allowing flavors to meld.
  12. 12. Remove from heat and let it sit covered for 5 minutes before serving.
  13. 13. Garnish with fresh mint and coriander leaves for a burst of freshness.
