Ingredients
- Pcs Chings Masala Chicken Chilli
- 1 piece Coconut
- 250g Ginger
- 250g Garlic
- 250g Green Chilli
- 100 g Coriander Seeds
- 20 g Turmeric Powder
- - Red Chilli
- 20G Curry Leaves
- - Mustard Seeds
- - Coconut Oil
- 500 ml Water
- 10G Salt
- 250g Coriander
Instructions
- Step 1: Heat a heavy-bottomed pan over medium heat. Dry roast coriander seeds, cumin seeds, and dry red chilies for 2-3 minutes until aromatic. Allow to cool and grind into a fine powder.
- Step 2: In the same pan, heat 2 tablespoons of coconut oil over medium heat for 2 minutes until shimmering. Add mustard seeds and curry leaves, and let them crackle for 30 seconds.
- Step 3: Add chopped onions to the pan and sauté for 5 minutes until golden brown. Stir in ginger, garlic, and slit green chilies, cooking for another 2 minutes until fragrant.
- Step 4: Add chopped tomatoes, turmeric powder, and red chili powder to the pan. Cook for 5 minutes, stirring occasionally, until the tomatoes break down into a thick paste.
- Step 5: Add the ground spice powder and grated coconut to the pan. Mix well and cook for 2 minutes. Add the chicken pieces and sauté for 5 minutes to coat evenly.
- Step 6: Pour in 300 ml of water, season with salt, and bring the curry to a boil. Reduce heat to low, cover, and simmer for 20 minutes until the chicken is tender and the curry thickens.
- Step 7: Garnish with freshly chopped coriander leaves. Serve hot with steamed rice or gluten-free millet-based bread for a wholesome dinner.
