Ingredients

  • Pcs Chings Masala Chicken Chilli
  • 1 piece Coconut
  • 250g Ginger
  • 250g Garlic
  • 250g Green Chilli
  • 100 g Coriander Seeds
  • 20 g Turmeric Powder
  • - Red Chilli
  • 20G Curry Leaves
  • - Mustard Seeds
  • - Coconut Oil
  • 500 ml Water
  • 10G Salt
  • 250g Coriander

Instructions

  1. Step 1: Heat a heavy-bottomed pan over medium heat. Dry roast coriander seeds, cumin seeds, and dry red chilies for 2-3 minutes until aromatic. Allow to cool and grind into a fine powder.
  2. Step 2: In the same pan, heat 2 tablespoons of coconut oil over medium heat for 2 minutes until shimmering. Add mustard seeds and curry leaves, and let them crackle for 30 seconds.
  3. Step 3: Add chopped onions to the pan and sauté for 5 minutes until golden brown. Stir in ginger, garlic, and slit green chilies, cooking for another 2 minutes until fragrant.
  4. Step 4: Add chopped tomatoes, turmeric powder, and red chili powder to the pan. Cook for 5 minutes, stirring occasionally, until the tomatoes break down into a thick paste.
  5. Step 5: Add the ground spice powder and grated coconut to the pan. Mix well and cook for 2 minutes. Add the chicken pieces and sauté for 5 minutes to coat evenly.
  6. Step 6: Pour in 300 ml of water, season with salt, and bring the curry to a boil. Reduce heat to low, cover, and simmer for 20 minutes until the chicken is tender and the curry thickens.
  7. Step 7: Garnish with freshly chopped coriander leaves. Serve hot with steamed rice or gluten-free millet-based bread for a wholesome dinner.
