Instructions

  1. 1. Rinse the brown rice under cold water and cook it in a pot with water until tender, about 25 minutes.
  2. 2. Peel the carrots and daikon radish, then julienne both into thin strips for stir-frying.
  3. 3. Slice the cucumber thinly into rounds and set aside for garnish.
  4. 4. In a small bowl, combine soy sauce, lemon juice, grated ginger, minced garlic, stevia, and black pepper to prepare the glaze.
  5. 5. Heat olive oil in a pan over medium heat and sear the salmon fillets for 2-3 minutes on each side until golden brown.
  6. 6. Pour the glaze mixture over the salmon and cook for another 3-4 minutes, basting frequently until the glaze thickens and coats the fillets.
  7. 7. In another pan, stir-fry the julienned vegetables with a pinch of salt and olive oil for 5-6 minutes until slightly tender but still crunchy.
  8. 8. Assemble the bowl by placing cooked rice as the base, topping with stir-fried vegetables, glazed salmon, and cucumber slices.
  9. 9. Sprinkle sesame seeds on top for added texture and flavor before serving.
