Ingredients
- 200 ml Coconut Milk
- 1 kg Basmati Rice
- 250g Green Chilli
- - Coconut Oil
- 20 g Turmeric Powder
- - Red Chilli
- - Coriander Powder
- 100 g Yellow Mustard Seeds
- 100 g Curry Leaves
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Wash and soak the basmati rice in water for 20 minutes.
- 2. Heat coconut oil in a pan and add mustard seeds until they splutter.
- 3. Add curry leaves, chopped onions, and green chilies, and sauté until onions are golden brown.
- 4. Stir in the ginger-garlic paste and cook for 2 minutes until aromatic.
- 5. Add chopped tomatoes, turmeric, red chili, and coriander powders, and sauté until the oil separates.
- 6. Add the cleaned prawns and cook for 5-7 minutes until they start to turn pink.
- 7. Pour in the coconut milk and simmer for 5 minutes to blend the flavors.
- 8. Season with salt and cook for another 2 minutes until prawns are fully cooked.
- 9. Meanwhile, cook the soaked rice with water and a pinch of salt until fluffy.
- 10. Plate the rice in a bowl and top with the prawn masala.
- 11. Garnish with fresh curry leaves or a splash of coconut oil if desired.
