Ingredients
- 500 g Onion
- 250 g Carrot
- 500 g Tomato - Hybrid
- 500 g Dry White Peas
- 1 kg Potato
- 250 ml Coconut Milk
- 100 g Dried Kokum
- 200 g Table Salt
- 50 g Cumin Powder
- 20 g Turmeric Powder
- - Red Chilli Powder
Instructions
- 1. Soak 100g of dried white peas in water overnight.
- 2. Chop 250g of Carrot, 250g of Potato, and 500g of Onion into bite-sized pieces.
- 3. Rinse and soak 50g of dried kokum in water for about 15 minutes.
- 4. In a large pot, boil the soaked white peas until they are tender, then set aside.
- 5. In another pot, heat a tablespoon of oil over medium heat and sauté the chopped onions until they are translucent.
- 6. Add the chopped carrots and potatoes to the pot and stir well for a few minutes.
- 7. Pour in 250 ml of natural coconut milk and add the tender white peas.
- 8. Season the mixture with 1 tablespoon of cumin powder, 1 tablespoon of red chili powder, and 1 teaspoon of turmeric powder.
- 9. Stir in the soaked kokum along with the soaking water, and add salt to taste.
- 10. Add 500g of chopped tomatoes, stir well, and let the curry simmer for 15-20 minutes until the vegetables are cooked through.
- 11. Garnish the curry with 100g of fresh coriander leaves.
- 12. Serve the kokum vegetable curry hot with rice or your favorite bread.
