Ingredients

  • 500 g Onion
  • 250 g Carrot
  • 500 g Tomato - Hybrid
  • 500 g Dry White Peas
  • 1 kg Potato
  • 250 ml Coconut Milk
  • 100 g Dried Kokum
  • 200 g Table Salt
  • 50 g Cumin Powder
  • 20 g Turmeric Powder
  • - Red Chilli Powder

Instructions

  1. 1. Soak 100g of dried white peas in water overnight.
  2. 2. Chop 250g of Carrot, 250g of Potato, and 500g of Onion into bite-sized pieces.
  3. 3. Rinse and soak 50g of dried kokum in water for about 15 minutes.
  4. 4. In a large pot, boil the soaked white peas until they are tender, then set aside.
  5. 5. In another pot, heat a tablespoon of oil over medium heat and sauté the chopped onions until they are translucent.
  6. 6. Add the chopped carrots and potatoes to the pot and stir well for a few minutes.
  7. 7. Pour in 250 ml of natural coconut milk and add the tender white peas.
  8. 8. Season the mixture with 1 tablespoon of cumin powder, 1 tablespoon of red chili powder, and 1 teaspoon of turmeric powder.
  9. 9. Stir in the soaked kokum along with the soaking water, and add salt to taste.
  10. 10. Add 500g of chopped tomatoes, stir well, and let the curry simmer for 15-20 minutes until the vegetables are cooked through.
  11. 11. Garnish the curry with 100g of fresh coriander leaves.
