A traditional Odia delicacy, Macha Besara is a flavorful fish curry made with mustard paste, turmeric, and spices. This keto-friendly version omits starchy ingredients while maintaining authentic taste, perfect for a healthy, low-carb dinner.

- 250g Green Chilli
- 20 g Turmeric Powder
- 10G Salt
- 200 ml Mustard Oil
- 500 ml Water
- 250g Coriander
Instructions
- Step 1: Wash the Rohu fish fillets thoroughly and pat them dry. Rub the fish with 2 g turmeric powder and a pinch of salt, then set aside for 10 minutes to marinate.
- Step 2: In a blender, grind mustard seeds, garlic cloves, and green chilies with 50 ml water to form a smooth paste. Set this aside for the mustard gravy.
- Step 3: Heat 30 ml mustard oil in a heavy-bottomed pan over medium heat until it starts to shimmer. Gently place the marinated fish fillets in the pan and sear each side for 2-3 minutes until golden brown. Remove the fish and set aside.
- Step 4: In the same pan, add the prepared mustard paste and sauté for 2 minutes over medium heat until aromatic. Add chopped tomatoes and cook for another 3 minutes until softened.
- Step 5: Add 150 ml water, the remaining turmeric powder, and salt to the pan. Bring the mixture to a gentle boil, then reduce the heat and simmer for 5 minutes.
- Step 6: Carefully slide the seared fish fillets into the gravy. Cover the pan and cook on low heat for 10 minutes, allowing the fish to absorb the flavors.
- Step 7: Garnish with freshly chopped coriander leaves and serve hot. Pair with a simple cucumber salad for a refreshing side.
