Ingredients

  • 250 g Carrot
  • 500g French Beans
  • 20G Curry Leaves
  • 250g Green Chilli
  • - Red Chilli
  • - Mustard Seeds
  • 100G Peanuts
  • 500 g Mille Kangni/Foxtail Millet
  • 500 ml Water
  • 1 kg Bell Peppers
  • - Onion
  • 250g Ginger
  • 20 g Turmeric Powder
  • 100g Garam Masala
  • 250g Coriander
  • 10G Salt
  • - Coconut Oil

Instructions

  1. Step 1: In a pan, dry roast the foxtail millet on medium heat for 2-3 minutes until aromatic. Set aside.
  2. Step 2: Bring 2 cups of water to a boil, add the soaked millet, and cook on low flame with a lid for 10-12 minutes until fluffy. Turn off the heat and let it rest.
  3. Step 3: Heat coconut oil in a large non-stick pan or kadhai. Add mustard seeds and let them splutter.
  4. Step 4: Add cumin seeds, curry leaves, slit green chili, and grated ginger. Sauté for 1 minute until fragrant.
  5. Step 5: Add chopped onion and cook until translucent. Stir in the carrots, French beans, and capsicum. Cook for 4-5 minutes until the vegetables are tender but crisp.
  6. Step 6: Sprinkle turmeric powder, red chili powder, and garam masala. Mix well.
  7. Step 7: Add the cooked millet to the pan, mix gently to combine with the vegetables, and cook for 2 more minutes to let the flavors meld.
  8. Step 8: Adjust salt to taste, garnish with fresh coriander leaves and roasted peanuts, and serve warm.
