Ingredients
- 250 g Carrot
- 500g French Beans
- 20G Curry Leaves
- 250g Green Chilli
- - Red Chilli
- - Mustard Seeds
- 100G Peanuts
- 500 g Mille Kangni/Foxtail Millet
- 500 ml Water
- 1 kg Bell Peppers
- - Onion
- 250g Ginger
- 20 g Turmeric Powder
- 100g Garam Masala
- 250g Coriander
- 10G Salt
- - Coconut Oil
Instructions
- Step 1: In a pan, dry roast the foxtail millet on medium heat for 2-3 minutes until aromatic. Set aside.
- Step 2: Bring 2 cups of water to a boil, add the soaked millet, and cook on low flame with a lid for 10-12 minutes until fluffy. Turn off the heat and let it rest.
- Step 3: Heat coconut oil in a large non-stick pan or kadhai. Add mustard seeds and let them splutter.
- Step 4: Add cumin seeds, curry leaves, slit green chili, and grated ginger. Sauté for 1 minute until fragrant.
- Step 5: Add chopped onion and cook until translucent. Stir in the carrots, French beans, and capsicum. Cook for 4-5 minutes until the vegetables are tender but crisp.
- Step 6: Sprinkle turmeric powder, red chili powder, and garam masala. Mix well.
- Step 7: Add the cooked millet to the pan, mix gently to combine with the vegetables, and cook for 2 more minutes to let the flavors meld.
- Step 8: Adjust salt to taste, garnish with fresh coriander leaves and roasted peanuts, and serve warm.
