Instructions

  1. 1. In a mixing bowl, combine whole wheat flour, chopped methi leaves, carom seeds, a pinch of salt, and water as needed to knead a soft dough. Let the dough rest for 15 minutes.
  2. 2. Heat 1 tablespoon of oil in a pan, add cumin seeds, and let them splutter. Add chopped onions, ginger, garlic, and green chilies. Sauté until the onions are golden brown.
  3. 3. Add the tomato puree to the pan and cook until the oil separates. Then, stir in turmeric, coriander powder, red chili powder, and salt. Cook for 2-3 minutes.
  4. 4. Add the diced bell pepper and cook for another 2 minutes to soften slightly. Then, add the cubed paneer and garam masala. Mix gently to coat the paneer with the spices.
  5. 5. Add fresh cream to the mixture and stir well. Simmer for 3-4 minutes, then remove from heat and set aside.
  6. 6. Divide the dough into equal-sized balls and roll them out into flat, round parathas.
  7. 7. Heat a tawa or flat pan over medium heat. Cook each paratha for 1-2 minutes on each side, applying a small amount of ghee until golden brown spots appear.
  8. 8. Serve the kadhai paneer hot with the freshly prepared methi parathas.
