Ingredients

  • 250 ml Coconut Milk
  • 250g Green Chilli
  • 500 G Ridge Gourd/Jhinge Tori(500Gm)
  • 250g Coriander
  • - Mustard Seeds
  • 500 ml Water
  • NaN Red Jowar Flour
  • 20 g Turmeric Powder
  • 200 ml Mustard Oil
  • 10G Salt

Instructions

  1. Step 1: Prepare the Jowar Dough. In a bowl, mix jowar flour with a pinch of salt, coconut milk, and enough warm water to form a smooth, pliable dough. Allow it to rest for 10 minutes.
  2. Step 2: Make the Roti. Divide the dough into small balls and roll them out gently using a rolling pin. Cook each roti on a hot tawa until lightly browned, flipping occasionally.
  3. Step 3: Cook the Ridge Gourd and Drumstick Curry. Heat mustard oil in a pan. Add mustard seeds and panch phoran; let them splutter.
  4. Step 4: Add tomatoes, turmeric powder, and green chilies, and cook until the tomatoes soften.
  5. Step 5: Add the drumsticks and ridge gourd with a pinch of salt. Stir well and pour in water. Cover and simmer until the vegetables soften.
  6. Step 6: Finish the Curry. Stir in the coconut milk and cook for another 2-3 minutes. Garnish with coriander leaves.
