  • 250 g Cucumber
  • 1 Kg Tanifuji Sticky Short Grain Sushi Rice
  • 28 G Yakinori 10 Sheetsnet
  • - Rice Vinegar

Instructions

  1. 1. Rinse 1 cup of sushi rice under cold water until the water runs clear. Soak the rice in water for 30 minutes.
  2. 2. Cook the rice in 1 1/4 cups of water in a rice cooker or on the stovetop. Once cooked, let it cool slightly.
  3. 3. In a small bowl, mix 2 tbsp of rice vinegar, 1 tbsp of sugar, and 1/2 tsp of salt. Heat gently until the sugar dissolves. Pour this mixture over the cooked rice and gently fold it in. Allow the rice to cool completely.
  4. 4. Prepare the filling by slicing 1 cucumber, 1 avocado, and 1 bell pepper into thin strips. Optionally, add 2 tbsp of blanched spinach leaves for extra greenery.
  5. 5. Lay a sheet of nori (seaweed) on a bamboo sushi mat, shiny side down. Spread a thin layer of the seasoned rice evenly over the nori, leaving a 1-inch border at the top edge.
  6. 6. Arrange the vegetable strips horizontally across the center of the rice. Add a small amount of sesame seeds for flavor, if desired.
  7. 7. Using the bamboo mat, carefully roll the sushi tightly, applying gentle pressure to form a log. Seal the edge with a bit of water.
  8. 8. Slice the sushi roll into bite-sized pieces using a sharp knife. Serve with soy sauce, pickled ginger (optional for non-Jain diners), and wasabi.
