- 250 g Carrot
- 250 g French Beans
- 1 pc (approx. 500 g to 800 g) Cabbage
- loose Ginger
- 100 g Garlic
- 200 g Table Salt
- - Red Chilli Powder
- 670Ml Winn Vinegar
- 500 G Sugar
Instructions
- 1. Wash and finely chop 200 grams of cabbage, 100 grams of carrots, and 50 grams of green beans.
- 2. In a large bowl, mix the chopped vegetables with 1 tablespoon of salt. Let it sit for 1 hour to draw out moisture.
- 3. Rinse the salted vegetables thoroughly under cold water to remove excess salt, then drain well.
- 4. In a separate bowl, combine 2 tablespoons of red chili powder, 1 tablespoon of ginger paste, 1 tablespoon of garlic paste, and 1 teaspoon of sugar.
- 5. Add the drained vegetables to the spice mixture and mix thoroughly until all vegetables are well-coated.
- 6. Transfer the mixture to a clean, airtight glass jar. Press down firmly to remove any air pockets.
- 7. Seal the jar and let it ferment at room temperature for 2 days. After fermentation, store in the refrigerator.
- 8. Serve the Jain Kimchi as a side dish or condiment.
