A no-bake, Jain-friendly fusion dish combining black beans, apples, and a tangy orange curry yogurt sauce. Perfect for a wholesome and satisfying dinner.
Ingredients
- 300 g Washington Royal Gala Apple (Seb)
- 475 g Tops Orange Marmalade Jam
- 400 g American Garden Dark Red Kidney Beans
- 125 g Red Bell Pepper
- 50 g Sakthi Curry Powder
- 200 g Grand Masala Handmade Garam Masala
Instructions
- 1. Pour 500 g drained black beans into a crockpot.
- 2. Add 1/2 cup of diced red bell pepper on top of the beans.
- 3. Spread 1 cup of diced apple evenly over the red bell pepper.
- 4. In a small bowl, mix 1 teaspoon of curry powder with 1/4 cup of orange marmalade. Spread this mixture over the ingredients in the crockpot.
- 5. Cover the crockpot and cook on Low for 5-6 hours.
- 6. While the crockpot is cooking, prepare the orange sauce by mixing 2 tablespoons orange marmalade, 1/4 teaspoon curry powder, and a pinch of garam masala in a non-reactive container. Refrigerate for at least 4 hours.
- 7. Once the crockpot cooking is complete, serve the bean curry in bowls.
- 8. Top each serving with a drizzle of the chilled orange curry sauce before serving.
