Ingredients
- - Fresh Tofu
- 250 g Spinach
- - Grated Coconut
- 250g Green Chilli
- - Juice - Pineapple
- - Thyme
- - Chunky Tomato, Garlic And Onion Sauce Jar-680.4 Gms
- - Coconut Oil
- 200Ml Dr. Patkar'S - Apple Cider Vinegar With Ginger, Garlic, Lemon, & Honey (200ml)
- - White Pepper
- 100 g Salt
Instructions
- 1. Press the tofu briefly, then cut it into cubes and toss it with lime juice, thyme, allspice, black pepper, chili, and salt.
- 2. Heat the coconut oil in a wide pan over medium-high heat, then sear the tofu until the edges turn golden and lightly crisp.
- 3. Remove the tofu to a plate, then add the onion, garlic, and ginger to the same pan and stir until fragrant.
- 4. Add the cabbage and tomato, then cook while stirring often until the cabbage softens but still keeps some bite.
- 5. Stir in the spinach and grated coconut, letting the greens wilt and the coconut coat the vegetables evenly.
- 6. Return the tofu to the pan, toss everything together for a minute, and finish with an extra squeeze of lime before serving.
