Island Jerk Coconut Tofu Skillet recipe

About this recipe

Jerk-spiced tofu gets a golden sear, then is tossed with cabbage, spinach, lime, thyme, and a touch of coconut for a simple island-style dinner. It is bold, savory, and satisfying without feeling heavy.

Ingredients

  • - Fresh Tofu
  • 250 g Spinach
  • - Grated Coconut
  • 250g Green Chilli
  • - Juice - Pineapple
  • - Thyme
  • - Chunky Tomato, Garlic And Onion Sauce Jar-680.4 Gms
  • - Coconut Oil
  • 200Ml Dr. Patkar'S - Apple Cider Vinegar With Ginger, Garlic, Lemon, & Honey (200ml)
  • - White Pepper
  • 100 g Salt

Instructions

  1. 1. Press the tofu briefly, then cut it into cubes and toss it with lime juice, thyme, allspice, black pepper, chili, and salt.
  2. 2. Heat the coconut oil in a wide pan over medium-high heat, then sear the tofu until the edges turn golden and lightly crisp.
  3. 3. Remove the tofu to a plate, then add the onion, garlic, and ginger to the same pan and stir until fragrant.
  4. 4. Add the cabbage and tomato, then cook while stirring often until the cabbage softens but still keeps some bite.
  5. 5. Stir in the spinach and grated coconut, letting the greens wilt and the coconut coat the vegetables evenly.
  6. 6. Return the tofu to the pan, toss everything together for a minute, and finish with an extra squeeze of lime before serving.
