Ingredients
- 100 g Curry Leaves
- 500 g Jaggery Powder
- 100 g Tamarind Paste
- 100 g Ginger
- 1 l Refined Soyabean Oil
- 200 g Table Salt
- 100 g Red Mustard Seeds
- 200 g Fenugreek Seeds
- 20 g Turmeric Powder
- - Red Chilli Powder
Instructions
- 1. Peel and finely chop 1/4 cup of fresh ginger into small pieces. Heat 2 tbsp of coconut oil in a pan on medium flame.
- 2. Add the chopped ginger to the pan and fry until golden brown and aromatic. Remove and set aside.
- 3. In the same pan, add 1/2 tsp mustard seeds and let them splutter. Add 1/4 tsp fenugreek seeds and 2 dried red chilies, broken into pieces. Sauté for 30 seconds.
- 4. Add 1/2 cup of tamarind pulp, 1/4 cup water, and 1/4 tsp turmeric powder to the pan. Stir well.
- 5. Add 2 tbsp jaggery, 1/2 tsp chili powder, and salt to taste. Mix thoroughly and let the mixture simmer until it thickens slightly.
- 6. Add the fried ginger back into the pan and stir well to combine. Cook for 2-3 minutes on low flame.
- 7. Turn off the heat and let the curry cool slightly. Transfer to a serving bowl and garnish with 1 sprig of curry leaves.
