Indian Spiced Corn Soup Recipe

A warm and comforting Indian-inspired corn soup, infused with aromatic spices and herbs, perfect for a satisfying dinner.
Ingredients
- 100 g Pasteurised Butter
- 400G Freshos Corn Kernels
- 400 Ml Chaokoh Coconut Milk
- 16 g Orika Oregano
- 150 g Spring Onion (Kandychi Path)
- 50 g Sakthi Curry Powder
Instructions
- 1. Melt 50 g of butter in a large pot over medium heat.
- 2. Add 1 tablespoon of curry powder and sauté for 2-3 minutes until fragrant.
- 3. Stir in 2 kg of fresh corn kernels and 500 ml of coconut milk. Mix well to combine.
- 4. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.
- 5. Add 2 tablespoons of finely chopped spring onion and stir well. Simmer for an additional 2 minutes.
- 6. Remove from heat and serve the soup hot, garnished with extra spring onion if desired.
