Ingredients
- 50 g Parsley Leaves
- 250 G Sova Leaves/Dill Leaves(250 Gm)
- 500 g Onion
- - Bell Peppers
- - Baby Tomatoes
- 500 gm Eggplant
- 400G Safa Tomato Paste (400g)
- 200 g Table Salt
- 50 g White Pepper Powder
- 500 g Sugar
- - Garlic Paste
- 500 Ml Champion Oil
Instructions
- 1. Cut the eggplants in half lengthwise and scoop out the flesh, leaving about 1/2 inch around the edges. Chop the scooped-out flesh into small pieces. Sprinkle the eggplant halves with table salt and let them sit for 30 minutes to remove any bitterness. Rinse the eggplant halves thoroughly and pat them dry with a paper towel.
- 2. Preheat the oven to 350°F (175°C).
- 3. In a large pan, heat 1/4 cup of Champion Oil over medium heat. Add the chopped onions, garlic paste, and the chopped eggplant flesh. Sauté until the onions are soft and translucent, about 5-7 minutes.
- 4. Add the baby tomatoes, diced bell peppers, sugar, white pepper powder, and a pinch of table salt to the pan. Cook for another 10 minutes, stirring occasionally, until the vegetables are softened and well combined.
- 5. Remove the pan from heat and stir in the chopped parsley leaves. Mix well to evenly distribute the parsley throughout the vegetable mixture.
- 6. Place the eggplant halves in a baking dish. Fill each half with the prepared vegetable mixture, pressing it down gently to ensure it is evenly packed.
- 7. Drizzle the remaining Champion Oil over the stuffed eggplants. In a small bowl, mix 1/4 cup of water with 2 tablespoons of lemon juice (if desired) and pour the mixture into the bottom of the baking dish to help keep the eggplants moist during baking.
- 8. Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 15 minutes, or until the eggplants are tender and the tops are slightly browned.
- 9. Let the Imam Bayildi cool to room temperature before serving. Garnish with extra parsley leaves, if desired.
