Ingredients
- 500 g Pluckk Organic Hybrid Tomatoes
- 250 g Organic Certified Green Capsicum (Donne Menasinakaayi)
- 100 g Sambar Onion Peeled
- 5 kg Whole Farm Grocery Sugar (5 Kg)
- 2 x 170 ml Masterchow White Vinegar - Pack Of 2
- 1 kg Supreme Harvest Iodized Salt
- 100 g Zoff Garlic Powder
Instructions
- 1. Peel 24 large tomatoes and cut them into chunks.
- 2. Dice 12 green peppers and 10 onions, and add 4 teaspoons of garlic powder.
- 3. In a large pot, combine the tomatoes, green peppers, onions, and garlic powder. Cook over medium heat, stirring occasionally, until the mixture reaches your desired consistency, about 30-40 minutes.
- 4. Add 2/3 cup sugar, 1 1/2 cups white vinegar, and 1/3 cup salt to the pot. Stir well to combine and let it simmer for an additional 10 minutes.
- 5. Carefully ladle the hot salsa into sterilized pint jars, leaving about 1/2 inch of headspace at the top.
- 6. Seal the jars with sterilized lids and rings. Process the jars in a hot water bath for 15 minutes to ensure proper sealing.
- 7. Remove the jars from the water bath and let them cool completely. Check the seals before storing. Yields 14 pints.
