Ingredients

  • 2 x 400 g Good To Go Boneless Chicken Breast - Pack Of 2
  • 25 g Thai Sweet Basil Leaves
  • 1 ltr Bertolli Extra Virgin Olive Oil
  • 100 g Sambar Onion Peeled
  • 250 g Organically Grown Green Capsicum
  • 1 pack (1 kg) 921 Everyday Long Grain Rice
  • 25 g Parsley
  • 50 g Sakthi Curry Powder
  • 1 kg Tata Salt (Vacuum Evaporated Iodised)
  • 1 pack (100 g) Tata Sampann Pure Black Pepper Powder

Instructions

  1. 1. Season 500 g chicken breast with 1 tbsp sweet basil, 1 tsp curry powder, 1 tsp salt, and 1/2 tsp black pepper.
  2. 2. Heat 1 tbsp olive oil in a large skillet over medium heat. Add the seasoned chicken, 1 diced onion, and 1 diced green pepper. Stir-fry until the chicken starts to brown, about 5-7 minutes.
  3. 3. Add 1/2 cup water to the skillet, cover, and reduce the heat to low. Let it simmer for 20 minutes, stirring occasionally.
  4. 4. Rinse 3 cups of rice thoroughly and stir it into the skillet. Add enough water to just cover the mixture.
  5. 5. Cover the skillet tightly and cook on low heat until the rice is tender and the water is absorbed, about 15-20 minutes.
  6. 6. Fluff the rice with a fork, garnish with 2 tbsp chopped parsley, and serve hot.
