Ingredients

  • 1 Bunch Spring Onion (Hasiru Eerulli)
  • 1 Bunch Nectr Desi Coriander Leaves (Chemical Free)
  • 1 Bunch Nectr Mint Leaves (Chemical Free)
  • 100 g Garlic - Single Clove
  • 125 g Red Bell Pepper (Lal Shimla Mirchi)
  • 500 g Organically Grown White Onion
  • 50 g The Select Aisle Bread Crumbs
  • 1 ltr Bertolli Extra Virgin Olive Oil
  • 100 g Catch Sprinklers - Iodized Table Salt
  • 500 g Dhani Pure Coriander Powder
  • 1 kg Twf Bread Flour T55 - Specialised Maida
  • 850 g Oleev Smart Vitafit Edibale Vegetable Oil
  • 115 g Epigamia Crunch Cup Greek Yogurt With Granola
  • 100 g Everest White Pepper

Instructions

  1. 1. Preheat the oven to 350 degrees F. Place 500 g of bread crumbs in an ovenproof dish, drizzle with 1 tablespoon of olive oil, and season with 1 teaspoon of salt and 1/2 teaspoon of white pepper.
  2. 2. Bake the bread crumbs for about 20 minutes, then remove it from the oven and let it cool. Once cooled, set aside.
  3. 3. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 2 minced garlic cloves, 1/2 diced red pepper, 1/2 diced white onion, and 3 chopped spring onions. Cook for about 5 minutes, stirring occasionally, until softened.
  4. 4. Transfer the cooked vegetables to a large bowl. Add 1/2 cup of bread crumbs, 1 teaspoon of dhani coriander powder, and 1/4 cup of chopped fresh coriander leaves. Mix well, then fold in the bread crumbs until evenly combined.
  5. 5. Shape the mixture into patties of your desired size. Dredge each patty in 1/2 cup of flour, ensuring they are evenly coated, and set aside.
  6. 6. Heat 1/2 cup of vegetable oil in a large skillet over medium-high heat. Fry the bread crumb cakes in batches for about 3-4 minutes per side, until golden and crisp on the outside. Remove and drain on paper towels.
  7. 7. In a small bowl, combine 1 cup of Greek yogurt with 1 tablespoon of finely chopped mint leaves. Mix well to create the mint yogurt sauce.
  8. 8. Serve the bread crumb cakes immediately with the mint yogurt sauce on the side.
