Hearty Vegan Bean Stew Recipe

Ingredients
- 500 g Carrot
- 500 g X 2 Organically Grown Potato Combo
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 200 g Hommade Tomato Puree
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
Instructions
- 1. Rinse and soak 12 oz of great northern beans in water for at least 6 hours or overnight. Drain and rinse before cooking.
- 2. In a large pot, add the soaked beans and cover with fresh water. Bring to a boil, then reduce to a simmer and cook for 1 1/2 to 2 hours until the beans are tender.
- 3. While the beans are cooking, peel and dice 2 carrots, 2 potatoes, and 1 onion. Mince 2 cloves of garlic.
- 4. Once the beans are tender, add the diced potatoes, carrots, onion, minced garlic, and 1 can of tomato puree to the pot. Stir well.
- 5. Season the stew with 1 tsp of salt and 1/2 tsp of black pepper. Simmer for 45 minutes, stirring occasionally, until the vegetables are soft and the flavors are well combined.
- 6. Taste and adjust seasoning if needed. Serve hot with a side of crusty bread or a fresh salad for a complete meal.
