Ingredients
- 1 head Cauliflower
- 500 g Tomato - Hybrid
- 200 ml Mustard Oil
- 100 g Hing Khoda
- 100 g Salt
- 100 g Lemon
- 250 g French Beans
- 500 g Capsicum Green
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- - Green Peas
- 100 g Jeera
- 100 g Red Chili Powder
- 20 g Turmeric Powder
Instructions
- 1. Heat a large tawa or flat griddle on medium heat and add 2 tablespoons of oil.
- 2. Once the oil is hot, add cumin seeds and let them splutter, then add hing (asafoetida).
- 3. Add the chopped tomatoes and cook for 5-7 minutes until soft and mushy.
- 4. Stir in turmeric powder, red chili powder, coriander powder, and salt, and mix well to form a masala base.
- 5. Add the cauliflower florets, green beans, and green peas to the tawa, stirring to coat them evenly in the masala.
- 6. Cook the vegetables on medium heat for 10-12 minutes, stirring occasionally to prevent sticking, until they are tender but still slightly crisp.
- 7. Add the diced capsicum and cook for another 5 minutes, ensuring it retains a slight crunch.
- 8. Sprinkle garam masala and fresh coriander leaves over the cooked vegetables, mixing gently to combine.
- 9. Remove from heat and serve hot with lemon wedges on the side for an extra tangy kick.
