This diabetic-friendly, vegetarian soup is a wholesome and satisfying dinner option. Packed with fresh spinach, white beans, and brown rice, it delivers a comforting blend of flavors and nutrients.
Ingredients
- 250 g Spinach - Chopped
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 100 g D'Lecta Parmesan Extra Hard Cheese Block
- 200 g Hommade Tomato Puree
- 400G Chtoura White Beans In Brine
- 1 kg Whole Farm Premium Brown Rice
- 1 kg Supreme Harvest Iodized Salt
- 100 g Catch Sprinklers - Black Pepper Powder
- 16 g Orika Oregano
Instructions
- 1. In a 3-1/2- or 4-quart slow cooker, combine 1 can of Hommade Tomato Puree, 1 can of Chtoura White Beans In Brine (rinsed and drained), 1/2 cup of Whole Farm Premium Brown Rice, 1/2 cup of finely chopped Sambar Onion, 1 teaspoon of Orika Oregano, 1/4 teaspoon of Supreme Harvest Iodized Salt, 1/4 teaspoon of Catch Sprinklers - Black Pepper Powder, and 2 minced Garlic cloves.
- 2. Stir the ingredients well to combine, then cover the slow cooker with its lid.
- 3. Cook the mixture on a low-heat setting for 5 to 7 hours or on a high-heat setting for 2 1/2 to 3 1/2 hours, until the rice is tender and the flavors are well blended.
- 4. About 10 minutes before serving, stir in 8 cups of Spinach - Chopped, allowing them to wilt in the hot soup.
- 5. Ladle the soup into bowls and sprinkle each serving with 1 tablespoon of grated D'Lecta Parmesan Extra Hard Cheese Block. Serve warm and enjoy.
