- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 50 g The Select Aisle Bread Crumbs
- 250 g Mirchi Powder (Bedagi)
- 1 kg Tata Plus Iron Health, Double Fortified Salt
- 200 g Hommade Tomato Puree
- 500 G Preserved Dried Salted Black Beans
Instructions
- 1. Rinse and soak 1 lb of pinto beans overnight, then drain and cook in 3 quarts of water until tender, about 1-1.5 hours.
- 2. When the beans are nearly done, stir in 1/2 teaspoon chili powder and 1 1/2 teaspoons salt. Adjust water as needed to maintain a stew-like consistency.
- 3. While the beans cook, combine 1/2 finely chopped onion, 1 teaspoon minced garlic, and 1/2 teaspoon chili powder in a skillet. Cook over medium heat, stirring frequently, until the onions are softened and fragrant, about 8-10 minutes.
- 4. Add 1 1/2 cups tomato puree, 1/2 teaspoon chili powder, 1/2 teaspoon salt, and 1 cup bread crumbs to the skillet. Stir well and simmer the mixture for 15 minutes, allowing the flavors to meld.
- 5. Combine the cooked bean mixture with the skillet mixture in a large baking dish. Stir to evenly distribute the ingredients.
- 6. Bake the combined mixture in a preheated oven at 350°F (175°C) for 20-25 minutes, until bubbling and heated through.
