- 2.5 Kg Austin Whole Peeled Tomato
- 51 g Knorr Classic Thick Tomato Soup
- 50 g Zoff Premium Indian Bay Leaf
- 1 pc (50 g) On1Y Pepper Grinder
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 80 g Knorr Vegetables Stock Cubes
Instructions
- 1. In a 4-quart microwave-safe pot with a cover, combine 1 cup of shredded cabbage, 2 diced carrots, 1 diced celery stalk, 1/2 cup of mixed vegetables, 1/3 cup of corn, and 1 diced tomato.
- 2. Add 1/2 can of tomato soup, 2 cups of water, 1 bay leaf, 1/4 teaspoon of thyme, 1/4 teaspoon of pepper, and a pinch of salt to the pot. Stir well to combine.
- 3. Cover the pot and microwave on High for 20 minutes, stirring halfway through at the 10-minute mark.
- 4. Reduce the microwave power to 50% and cook for an additional 25 minutes, stirring every 10 minutes to ensure even cooking.
- 5. Check the softness of the celery to ensure the vegetables are tender. Adjust seasoning with salt and pepper if needed.
- 6. Remove the bay leaf before serving. Serve the soup hot and enjoy a hearty dinner.
