Ingredients
- 1 kg Sweet Potato
- - Baby Tomatoes
- 500 g Onion
- 100 g Garlic
- loose Ginger
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli
- 45 g Garam Masala
- - Coconut Oil
- - Coriander Powder
- 100 g Salt
- 1pc Watermelon
Instructions
- 1. Rinse the red lentils thoroughly under running water and set them aside.
- 2. Peel and dice the sweet potatoes into small cubes for even cooking.
- 3. Finely chop the onion, garlic, ginger, and tomatoes to prepare for sautéing.
- 4. Heat coconut oil in a large pot and add cumin seeds; let them sizzle for 30 seconds.
- 5. Add the chopped onions, garlic, and ginger, and sauté until the onions turn golden brown.
- 6. Stir in the tomatoes, turmeric, red chili powder, and coriander powder, cooking until the tomatoes soften.
- 7. Add the diced sweet potatoes and rinsed lentils to the pot, mixing everything well.
- 8. Pour in water and bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- 9. Stir occasionally to prevent sticking, and check that the lentils and sweet potatoes are tender.
- 10. Add garam masala and adjust salt as needed, cooking for another 2 minutes.
- 11. Garnish with freshly chopped coriander leaves before serving.
- 12. Serve hot with steamed rice or enjoy it as a standalone hearty stew.
