- 250 g Spinach
- 500 g Onion
- - Tomato Ketchup
- 100 g Garlic
- loose Ginger
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli
- 250 ml Olive Oil
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- - Coriander Powder
Instructions
- 1. Rinse and chop the spinach leaves finely, ensuring all dirt is removed.
- 2. Dice the onion and tomato into small pieces, and mince the garlic and ginger.
- 3. Heat olive oil in a pan over medium heat and add cumin seeds; let them sizzle for 30 seconds.
- 4. Add the minced garlic and ginger, sautéing until aromatic, followed by the diced onion.
- 5. Cook the onion for 4-5 minutes until it turns golden brown, stirring occasionally.
- 6. Add the chopped tomato, turmeric powder, red chili powder, and coriander powder; cook for 5 minutes until softened.
- 7. Stir in the cooked lentils and season with salt, mixing well to coat them in the spices.
- 8. Add the chopped spinach and cook for 3-4 minutes until wilted and integrated with the lentils.
- 9. Squeeze fresh lemon juice over the stir-fry and mix to enhance the flavor.
- 10. Garnish with chopped coriander leaves and serve hot with a side of lemon wedges.
