- 500 g Whole Farm Premium Quinoa Seeds
- - Frozen Mixed Vegetables
- 500 g Desi Tomato (Tamatar)
- - Onion-250 Gms
- 35 g Keya Foods Italian Seasoning
- - Ginger Powder
- 100 ml Oleev Olivana Natural Olive Oil (Bottle)
- 250 ml Real Thai Unsweetened Coconut Milk
- 1 pack (1 kg) Aashirvaad Crystal Salt | Iodised
- 25 g Whole Black Pepper
Instructions
- 1. Rinse the quinoa thoroughly under running water to remove any bitterness.
- 2. Add the quinoa to a pot with 250 ml of water, bring to a boil, then reduce heat and simmer until cooked, approximately 15 minutes.
- 3. While the quinoa cooks, dice the onion and tomato finely, and chop the mixed vegetables into small pieces.
- 4. Heat 2 tablespoons of olive oil in a pan and sauté the onion until translucent, for about 3-4 minutes.
- 5. Add the chopped mixed vegetables to the pan and stir well, cooking for 5-7 minutes until slightly tender.
- 6. Stir in the diced tomatoes, ginger powder, Italian seasoning, salt, and black pepper, and cook until the tomatoes break down into a sauce, about 5 minutes.
- 7. Add coconut milk to the pan and mix well, allowing the flavors to meld for 2-3 minutes.
- 8. Once the quinoa is cooked, fluff it with a fork and add it to the vegetable mixture in the pan.
- 9. Mix everything together thoroughly, ensuring the quinoa is evenly coated with the tomato and coconut milk sauce.
- 10. Taste and adjust seasoning if necessary, then serve warm.
