Ingredients
- 25 g Parsley
- 1 Combo Fortune Rice Bran 870G & Mustard Oil 1L Pouch
- 100 g Sambar Onion Peeled
- 200 g Orange Carrot (Gajar)
- 400 g Pastazara Finely Chopped Tomatoes
- 250 g Zucchini Green
- 200 g Hydroponic Sweet Bell Pepper (Cocktail)
- 1 Kg Kissan Tomato Paste
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
Instructions
- 1. Heat 4 tablespoons of oil in a large pot over medium heat. Add 1/2 cup diced celery and 1 finely chopped onion, and sauté for about 10 minutes until softened.
- 2. Add 3 diced carrots, 2 tablespoons of tomato paste, and 2 diced tomatoes to the pot. Stir well to combine.
- 3. Add 3 cups of diced zucchini as a substitute for potatoes, along with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Mix thoroughly.
- 4. Pour in approximately 4 to 5 cups of water, depending on your desired soup thickness. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes until the vegetables are tender.
- 5. Stir in 2 tablespoons of cooked brown rice and 2 tablespoons of chopped fresh parsley. Simmer for an additional 5 minutes to allow the flavors to meld.
- 6. Taste and adjust seasoning if needed. Serve hot and enjoy your diabetic-friendly vegetable soup.
