Ingredients
- 100 g Sambar Onion Peeled
- 500 g Carrot
- 100 g Celery Stalk
- 100 g Garlic - Single Clove
- 400G Chtoura Foods Boiled Chickpeas In Brine
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
Instructions
- 1. Set aside 1 cup of boiled chickpeas from the can, rinsed and drained.
- 2. In a 6-quart pan, combine 1 cup boiled chickpeas, 1 diced Sambar onion, 6 chopped carrots, and 3 diced stalks of celery, and 1 minced garlic clove.
- 3. Fill the pan halfway with water and bring the mixture to a boil over medium-high heat.
- 4. Reduce the heat to low and let the soup simmer for 1.5 to 2 hours, stirring occasionally, until the chickpeas are tender and the flavors are well combined.
- 5. Season the soup with 1 tsp Tata Salt or to taste, and stir well before serving.
- 6. Serve the soup warm as a hearty dinner option. Optionally, you can add a small portion of boiled chickpeas when serving for added texture.
