Instructions

  1. 1. In a large soup pot, heat 1 minced garlic clove over medium heat until fragrant, about 1 minute.
  2. 2. Add 4 minced garlic cloves, 2 diced stalks of celery, 1 chopped sambar onion, 1 diced carrot, 2 bay leaves, and 1 teaspoon dried oregano to the pot. Saute the vegetables over medium heat until softened, about 6 minutes.
  3. 3. Stir in 2 1/4 cups of chickpeas, 10 cups of water, and 1 cup of tomato sauce. Bring the mixture to a boil.
  4. 4. Reduce the heat to low and let the soup simmer for about 45 minutes, or until the chickpeas are tender.
  5. 5. If the soup is too thick, add a little more water and simmer for an additional 5 minutes until heated through.

  7. 7. Ladle the soup into heated bowls and serve hot.
