Hearty Autumn Chicken Stew Recipe

Ingredients
- 500 g Carrot
- 250 g Organically Grown Green Capsicum
- 500 g X 2 Organically Grown Potato Combo
- 100 g Garlic - Single Clove
- 200 g Tendercuts Chicken 65 Boneless
- 10 g Rosemary
- 35 g On1Y Grinder Italian Seasoning Flakes
- 1 ltr Bertolli Extra Virgin Olive Oil
- 200 g Hommade Tomato Puree
- 1 kg Basmati Rice
- 1 kg Onion (Pyaz)
- 750 ml Catch Clear Lemon N Lime Flavoured Water
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
Instructions
- 1. Dice 2 carrots, 1 green pepper, 2 potatoes, and 1 onion into bite-sized pieces. Mince 1 clove of garlic.
- 2. Heat a large pot over medium heat and add 1 tbsp olive oil. Sauté the diced onion and minced garlic until fragrant, about 2-3 minutes.
- 3. Add 500 g chicken pieces to the pot and cook until lightly browned on all sides, about 5-7 minutes.
- 4. Stir in the diced carrots, green pepper, and potatoes. Cook for another 5 minutes, stirring occasionally.
- 5. Add 2 cups of water, 1 tsp rosemary, 1 tsp Italian seasoning, 1/2 tsp pepper, and 1 tsp salt. Bring the mixture to a boil.
- 6. Reduce the heat to low, cover the pot, and let the stew simmer for 25-30 minutes, or until the vegetables are tender and the chicken is fully cooked.
- 7. In the last 10 minutes of cooking, stir in 4 cups of cooked rice to the pot and mix well.
- 8. Taste and adjust seasoning if needed. Serve hot and enjoy your hearty autumn chicken stew.
