Ingredients

  • 500 g Carrot
  • 100 g Celery Stalk
  • 100 g Sambar Onion Peeled
  • 100 g Broccoli Florets
  • 125 g White Shimeji Mushroom (Anabe)
  • 1 Ltr Sarwar Salad Oil
  • 1 kg Tata Plus Iron Health, Double Fortified Salt
  • 1 kg Whole Farm Grocery Sugar (Packet)

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. Cut 2 carrots and 2 celery stalks into 3-inch long matchstick-thin strips.
  3. 3. Slice 1 onion thinly and cut 1 head of broccoli into 2 x 1/2-inch pieces.
  4. 4. Quarter 1/2 lb of mushrooms or halve them if they are small.
  5. 5. In a large mixing bowl, combine the carrots, celery, onion, broccoli, and mushrooms. Drizzle with 1/4 cup salad oil and sprinkle with 1 1/2 tsp salt and 1/2 tsp sugar. Toss to coat evenly.
  6. 6. Transfer the vegetable mixture to a large baking dish and cover it with aluminum foil.
  7. 7. Bake in the preheated oven for 25 minutes. Remove the foil, stir the vegetables, and bake uncovered for an additional 10 minutes, or until the vegetables are tender-crisp.
  8. 8. Remove from the oven and serve warm as a hearty dinner side or main dish.
