Ingredients
- 500 g Carrot
- 100 g Celery Stalk
- 100 g Sambar Onion Peeled
- 100 g Broccoli Florets
- 125 g White Shimeji Mushroom (Anabe)
- 1 Ltr Sarwar Salad Oil
- 1 kg Tata Plus Iron Health, Double Fortified Salt
- 1 kg Whole Farm Grocery Sugar (Packet)
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Cut 2 carrots and 2 celery stalks into 3-inch long matchstick-thin strips.
- 3. Slice 1 onion thinly and cut 1 head of broccoli into 2 x 1/2-inch pieces.
- 4. Quarter 1/2 lb of mushrooms or halve them if they are small.
- 5. In a large mixing bowl, combine the carrots, celery, onion, broccoli, and mushrooms. Drizzle with 1/4 cup salad oil and sprinkle with 1 1/2 tsp salt and 1/2 tsp sugar. Toss to coat evenly.
- 6. Transfer the vegetable mixture to a large baking dish and cover it with aluminum foil.
- 7. Bake in the preheated oven for 25 minutes. Remove the foil, stir the vegetables, and bake uncovered for an additional 10 minutes, or until the vegetables are tender-crisp.
- 8. Remove from the oven and serve warm as a hearty dinner side or main dish.
