Instructions

  1. 1. In a large bowl, combine 1 1/2 cups bread crumbs, 2 tbsp finely chopped onion, 1/4 tsp dry mustard, 1 1/2 tsp salt, 1/8 tsp black pepper, 1 egg, and 1/3 cup pineapple juice. Mix until well blended.
  2. 2. Shape the mixture into small balls, about 1 inch in diameter.
  3. 3. Heat 2 tbsp oil in a large skillet over medium heat. Add the balls and cook until browned on all sides, about 6-8 minutes. Remove the balls and set aside. Drain any excess oil from the skillet.
  4. 4. In a small bowl, mix 1/4 cup brown sugar, 1/2 tsp ground ginger, 1 tbsp cornstarch, and a pinch of salt. Gradually stir in 1/2 cup reserved peach juice, 1/4 cup vinegar, and 1 tbsp soy sauce until smooth.
  5. 5. Pour the sauce mixture into the skillet and cook over medium heat, stirring constantly, until thickened, about 3-4 minutes.
  6. 6. Return the balls to the skillet and stir to coat them in the sauce. Cook for 5 minutes, allowing the flavors to meld.
  7. 7. Add 1 cup peach chunks, 1 green pepper cut into strips, and 1 tomato cut into wedges to the skillet. Cook for an additional 3-4 minutes, until the vegetables are tender and heated through.
  8. 8. Serve the balls and sauce over steamed rice for a complete meal.
