Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. In a large skillet, melt 1/4 cup butter over medium heat.
  3. 3. Add 1 finely chopped onion and 1 1/2 cups of rice to the skillet. Cook and stir for about 5 minutes, until the rice turns golden and the onion becomes tender.
  4. 4. Stir in 1/2 teaspoon salt, 1/2 teaspoon nutmeg powder, 1/2 teaspoon turmeric, 1/4 teaspoon curry powder, and 1/8 teaspoon pepper, ensuring the spices coat the rice evenly.
  5. 5. Transfer the rice mixture to an ungreased 2-quart casserole dish.
  6. 6. Heat 3 1/2 cups of chicken broth to a boil in a separate saucepan, then pour it over the rice mixture in the casserole dish. Stir gently to combine.
  7. 7. Cover the casserole dish tightly with a lid or aluminum foil and bake in the preheated oven for 30 to 40 minutes, or until the liquid is absorbed and the rice is tender.
  8. 8. Remove from the oven, fluff the rice with a fork, and serve warm.
