Ingredients
- 2 x 400 g Good To Go Boneless Chicken Breast - Pack Of 2
- 50 g The Select Aisle Bread Crumbs
- 200 g Old Hill Parmesan Cheese
- 100 g Garlic - Single Clove
- 250 g Spinach - Chopped
- 141 g Pam Grilling Grillades Cooking Spray
- 400 g Agapi Protein Greek Yogurt (Natural)
- 100 g Nutoras Cheese Feta With Olive Oil (Block)
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pc (50 g) Everest Tasteeto Black Pepper | Grinder Cap Bottle
Instructions
- 1. Preheat your oven to 400°F (200°C).
- 2. Heat a skillet over medium heat and sauté 1 minced garlic clove until softened, about 2-3 minutes.
- 3. Add 100 g chopped spinach, 100 g feta cheese, and 1/2 cup greek yogurt to the skillet. Stir until the mixture is well combined and creamy. Season with Namakwali Authentic Mix Seasoning Flavoured Salt and Everest Tasteeto Black Pepper to taste, then remove from heat.
- 4. In two separate bowls, place 1/2 cup greek yogurt in one and mix 3/4 cup grated parmesan cheese in the other.
- 5. Take 2 chicken breasts and carefully make a slit in the thickest part of each breast to create a pocket, ensuring not to cut all the way through. Stuff each pocket with the spinach mixture and secure with toothpicks.
- 6. Dip each stuffed chicken breast into the greek yogurt, shaking off any excess, then coat thoroughly in the parmesan mixture.
- 7. Place the coated chicken breasts on a baking sheet fitted with a rack sprayed with cooking spray. Bake in the preheated oven for 25 minutes or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
- 8. Remove the toothpicks before serving and enjoy your flavorful stuffed chicken dinner.
