Ingredients
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 125 g White Shimeji Mushroom (Anabe)
- 125 g Red Bell Pepper
- 500 g Brinjal - Bharta (Bhartachi Vangi)
- 250 g Zucchini Green
- 400 g Pastazara Finely Chopped Tomatoes
- 10 g Fresh Thyme
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pc (50 g) Catch Black Pepper Sprinkler
Instructions
- 1. In a large nonstick skillet, heat 1 tablespoon of vegetable oil over medium heat. Add 1 diced onion, 2 minced garlic cloves, 8 sliced mushrooms, and 1 diced red pepper. Stir-fry for about 4 minutes until the vegetables are tender.
- 2. Using a slotted spoon, transfer the cooked vegetables to a side dish and set aside.
- 3. Heat the remaining 1 tablespoon of vegetable oil in the skillet. Add 2 cups of diced eggplant and 1 sliced zucchini. Stir-fry for about 4 minutes until the vegetables are tender.
- 4. Return the cooked onion, garlic, mushroom, and red pepper mixture to the skillet. Stir to combine.
- 5. Add 2 diced tomatoes, 1/2 teaspoon of thyme, and a pinch of salt and pepper to the skillet. Stir well to incorporate the flavors.
- 6. Cover the skillet and let the mixture simmer for 5 minutes over low heat, allowing the flavors to meld together.
- 7. Serve the stir-fry hot as a main dish or alongside your favorite Halal accompaniments.
