Ingredients
- 500 g Tomato Green
- 1 kg Nectr Onion (Chemical Free)
- 250 g Organically Grown Green Capsicum
- 100 g Fresh Green Jalapeno
- 1 kg Tata Salt, Iodised Namak, Vacuum Evaporated Salt
- 1 Litre Chtoura Garden White Vinegar
- 5 kg Whole Farm Grocery Sugar (5 Kg)
- 50G Ottogi Mustard Powder 오뚜기 겨자분 50G
- 150 g Tatvahills Turmeric Powder With Black Pepper
- 1 pack (100 g) Zoff Big Fennel Seeds Whole - Saunf
Instructions
- 1. Chop 1 kg green tomatoes, 800 g onions, and 1 kg sweet green peppers into small pieces. Sprinkle with 3 tbsp salt and let stand for 4 to 6 hours in a cool place.
- 2. Drain the vegetables well and transfer them to a large pot. Add 6 chopped jalapeno peppers, 4 cups vinegar, 1 3/4 cups sugar, 4 tbsp dry mustard, 3 tbsp fennel seeds, and 2 tsp turmeric.
- 3. Tie the dry mustard, fennel seeds, and turmeric in a thin cloth bag and place it in the pot with the vegetables.
- 4. Simmer the mixture over medium heat for 15 minutes, stirring occasionally to ensure even cooking.
- 5. Remove the spice bag from the pot and discard it.
- 6. Pack the hot relish into sterilized jars, leaving about 1 cm of headspace at the top. Seal the jars tightly.
- 7. Process the sealed jars in a boiling water bath for 5 minutes. Begin counting time as soon as the water returns to boiling.
- 8. Remove the jars from the water bath and let them cool completely before storing. Serve as a condiment or side dish for dinner.
