Ingredients

  • 500 g Pluckk Organic Hybrid Tomatoes
  • 250 g Organic Certified Green Capsicum (Donne Menasinakaayi)
  • 100 g Sambar Onion Peeled
  • 100 g Garlic - Single Clove
  • 100 g Fresh Green Jalapeno
  • 5 kg Whole Farm Grocery Sugar (5 Kg)
  • 2 x 170 ml Masterchow White Vinegar - Pack Of 2
  • 1 kg Supreme Harvest Iodized Salt

Instructions

  1. 1. Peel 24 lb of tomatoes and cut them into chunks.
  2. 2. Dice 12 green peppers, 10 onions, and mince 4 tbsp of garlic, and finely chop 18 jalapenos.
  3. 3. In a large pot, combine the tomatoes, peppers, onions, jalapenos, and garlic. Cook over medium heat, stirring occasionally, until the mixture reaches your desired consistency, about 20-30 minutes.
  4. 4. Add 2/3 cup of sugar, 1 1/2 cups of white vinegar, and 1/3 cup of salt to the pot. Stir well to incorporate the seasonings.
  5. 5. Carefully pour the hot salsa into sterilized pint jars, leaving about 1/2 inch of space at the top.
  6. 6. Seal the jars tightly with lids and process them in a hot water bath for 15 minutes to ensure proper preservation.
  7. 7. Allow the jars to cool completely before storing. Yields 14 pints of salsa, ready to serve with your favorite dishes.
