Instructions

  1. 1. In a large kettle, place 6 peeled and quartered potatoes, 6 peeled and sliced carrots, 6 peeled and cubed carrots, and 6 peeled whole onions. Cover with cool water. Bring to a simmer and cook for 3 1/2 to 4 hours, or until the vegetables are tender.
  2. 2. After 3 1/2 hours, add 1 head of cabbage, cut into wedges, on top of the vegetables in the kettle.
  3. 3. Cover and cook for about 25 minutes, or until the vegetables are tender.
  4. 4. In a separate pot, boil 6 peeled and cubed beets until tender, as they take longer to cook than other vegetables. Alternatively, if using canned beets, reheat them to boiling.
  5. 5. Once all the vegetables are cooked, remove them from the kettle and arrange on a large platter. Keep warm while preparing the dumplings.
  6. 6. To make the dumplings, mix together 2 cups of flour, 1 teaspoon of salt, 4 teaspoons of baking powder, and 1/4 teaspoon of pepper in a bowl.
  7. 7. In a separate bowl, whisk together 1 egg, 2/3 cup of milk, and 3 tablespoons of melted butter. Add the wet ingredients to the dry ingredients and mix until a stiff, moist batter forms.
  8. 8. Bring the cooking liquid (pot likker) in the kettle to a boil. Drop spoonfuls of the dumpling batter into the boiling liquid.
  9. 9. Cook the dumplings uncovered until the liquid returns to a boil. Then cover the kettle tightly and cook for 20 minutes without lifting the lid.
  10. 10. Serve the tender vegetables and fluffy dumplings together for a hearty and satisfying dinner.
