Ingredients
- 500 g Carrot
- 250 g Zucchini Green
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 200 g Hommade Tomato Puree
- 250 g Beans Broad
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
Instructions
- 1. Rinse 12 oz of great northern beans and soak them in water for at least 6 hours or overnight.
- 2. Drain and rinse the beans, then place them in a large pot. Add enough water to cover the beans and cook over medium heat until tender, about 1 1/2 to 2 hours.
- 3. While the beans are cooking, peel and dice 2 carrots, 2 zucchinis, and 1 onion. Mince 2 cloves of garlic.
- 4. Once the beans are tender, add the diced carrots, zucchinis, onion, and minced garlic to the pot. Stir in 1 can (14 oz) of tomato puree, 1 tsp of salt, and 1/2 tsp of black pepper.
- 5. Simmer the stew over medium heat for 45 minutes, stirring occasionally, until the vegetables are tender and the flavors are well combined.
- 6. Taste and adjust seasoning if needed. Serve hot with a side of fresh bread or rice for a complete meal.
