Ingredients
- - BALAJI MUNG DAL 250GM
- 1 kg Rice
- - Baby Tomatoes
- 200 ml Coconut Milk
- 20 g Turmeric Powder
- - Cumin Seeds 100g
- 100 g Salt
- 1 kg Water Chestnuts
- 200 ml Mustard Oil
- - Tomato Ketchup
Instructions
- 1. Rinse the mung dal and rice thoroughly under running water.
- 2. Heat oil in a pressure cooker and add cumin seeds; let them crackle.
- 3. Add chopped tomatoes and sauté until soft and aromatic, about 3-4 minutes.
- 4. Stir in turmeric powder and the rinsed mung dal and rice, mixing well.
- 5. Add coconut milk, water, and salt, stirring to combine evenly.
- 6. Close the pressure cooker lid and cook on medium heat for 2-3 whistles.
- 7. Allow the pressure to release naturally before opening the lid.
- 8. Gently fluff the khichdi with a spoon and check consistency; add more water if needed.
- 9. Serve hot with a garnish of fresh coriander leaves if desired.
