A comforting one-pot meal made with yellow moong dal and rice, lightly spiced and perfect for a wholesome Gujarati lunch.
Ingredients
- 3 g Basil
- 250 g Spinach
- - Parmesan Cheese Grated
- 500 g Spaghetti Whole Wheat Pasta
- 400g Baby Roma Tomatoes
- 200g Happilo Whole Cashews 200g
- 250 ml Olive Oil
- 200 g Table Salt
- - Black Pepper Powder-25 Gm
- 1 kg Yellow Moong Dal
- 1 kg Rice
- - Tomato Ketchup
- - Green Peas
- - Cumin Seeds 100g
- 20 g Turmeric Powder
- 200 ml Ghee
- 100 g Salt
- 1 kg Water Chestnuts
Instructions
- 1. Rinse the yellow moong dal and rice thoroughly under running water until the water runs clear.
- 2. Chop the tomato into small pieces and set aside, along with the green peas.
- 3. Heat ghee in a pressure cooker and add cumin seeds, allowing them to splutter.
- 4. Add the chopped tomatoes and cook for 2-3 minutes until they soften slightly.
- 5. Mix in the turmeric powder and stir well to combine with the tomatoes.
- 6. Add the washed moong dal and rice to the pressure cooker, stirring for 1-2 minutes.
- 7. Pour in the water, add salt, and stir to combine all the ingredients.
- 8. Add the green peas and close the pressure cooker lid securely.
- 9. Cook on medium heat for 2-3 whistles, then turn off the heat and let the pressure release naturally.
- 10. Open the lid, stir the khichdi gently, and adjust the consistency with a little water if it's too thick.
- 11. Serve hot with a drizzle of ghee, if desired, for added flavor and warmth.
