Instructions
- 1. In a large saucepan, bring 8 cups of water to a boil.
- 2. Rinse 1 cup of sprouted mung beans in a colander under cold water and add them to the saucepan.
- 3. Add 1 cup of diced carrots, 3 sprigs of thyme, and 1 teaspoon of salt to the saucepan. Cover and simmer for 20 to 25 minutes, ensuring the mung beans are tender but not overcooked.
- 4. Drain the mung beans and set the mung beans aside to cool slightly.
- 5. In a large mixing bowl, whisk together 1 tablespoon of Dijon mustard, 3/4 cup of vegetable oil, 1/4 cup of apple cider vinegar, 1 cup of finely chopped onion, 4 tablespoons of chopped parsley, 1/2 teaspoon of salt, and 1/4 teaspoon of freshly ground pepper.
- 6. Add the cooked mung beans to the bowl and toss gently to combine. Serve the mung bean salad warm, lukewarm, or cool.
