Ingredients
- 1 Bunch x 2 Coriander Leaves (Kotthambari)
- 250 ml Minute Maid Pulpy Orange Pet
- 720 Ml Freshows Jalapeno Sliced
- 500 ml Oleev Extra Light Olive Oil
- 100 ml Oleev Olivana Natural Olive Oil (Bottle)
- 120 g Golden Prize Pink Salmon Fillet In Oil
- 100 g Zoff Garlic Powder
Instructions
- 1. Thaw the salmon fillets if frozen, then rinse them under cold water and pat dry with paper towels.
- 2. Cut the salmon into 4 pieces and set aside.
- 3. In a medium bowl, combine 1/3 cup diced peeled kiwi fruit, 1 tablespoon chopped fresh coriander leaves, 1 tablespoon orange juice, and 1 finely chopped jalapeno pepper. Mix well to create the salsa and set aside.
- 4. Brush both sides of each salmon piece with 1 teaspoon olive oil and sprinkle evenly with 1/4 teaspoon garlic powder.
- 5. Preheat the grill and coat the unheated rack with olive oil. Place the salmon pieces on the rack directly over medium heat.
- 6. Grill the salmon for 8 to 12 minutes, turning once halfway through, until the fish flakes easily when tested with a fork.
- 7. Serve the grilled salmon topped with the prepared kiwi salsa. If desired, garnish with additional coriander leaves.
