- 500G Gustora Penne Rigate Pasta
- 1 pc (1 L) Sofit Unsweetened Almond Milk Drink
- 250 g Watermelon Slices
- 500 g Dairy Craft Unsalted White Butter
- 1 Kg Red Lotus Special Flour
- 100 g x 2 Milky Mist Butter Chiplet Pack
- 2 x 295 g Britannia Nutrichoice Sugar Free Healthy & Digestive Crackers Cracker - Pack Of 2
Instructions
- 1. Preheat your grill to medium heat.
- 2. Boil 500 g pasta in salted water until al dente, then drain and set aside.
- 3. In a large saucepan over medium heat, melt 60 g butter.
- 4. Add 14 cup flour to the melted butter and whisk to form a smooth paste. Cook for 1-2 minutes until bubbling.
- 5. Gradually add 3 cups almond milk, whisking constantly to avoid lumps. Heat until the mixture begins to boil and thickens.
- 6. Stir in a small amount of salt to season the sauce and mix until smooth.
- 7. Combine the cooked pasta with the sauce and mix well.
- 8. Transfer the pasta mixture to a casserole dish.
- 9. If you have leftover crackers, crumble them and sprinkle on top of the casserole.
- 10. Broil the casserole 4 inches from the heat for 5 minutes or until the top is golden brown.
- 11. While the pasta is baking, prepare the fruit salad by slicing 2 cups watermelon.
- 12. Lightly brush the fruit slices with a small amount of melted butter and grill them for 2-3 minutes on each side until slightly caramelized.
- 13. Allow the grilled fruit to cool slightly, then toss them in a bowl and refrigerate for 30 minutes to let the flavors meld.
- 14. Serve the pasta bake hot alongside the chilled grilled fruit salad for a balanced and satisfying dinner.
