Instructions

  1. 1. Preheat your grill to medium heat.
  2. 2. Boil 500 g pasta in salted water until al dente, then drain and set aside.
  3. 3. In a large saucepan over medium heat, melt 60 g butter.
  4. 4. Add 14 cup flour to the melted butter and whisk to form a smooth paste. Cook for 1-2 minutes until bubbling.
  5. 5. Gradually add 3 cups almond milk, whisking constantly to avoid lumps. Heat until the mixture begins to boil and thickens.
  6. 6. Stir in a small amount of salt to season the sauce and mix until smooth.
  7. 7. Combine the cooked pasta with the sauce and mix well.
  8. 8. Transfer the pasta mixture to a casserole dish.
  9. 9. If you have leftover crackers, crumble them and sprinkle on top of the casserole.
  10. 10. Broil the casserole 4 inches from the heat for 5 minutes or until the top is golden brown.
  11. 11. While the pasta is baking, prepare the fruit salad by slicing 2 cups watermelon.
  12. 12. Lightly brush the fruit slices with a small amount of melted butter and grill them for 2-3 minutes on each side until slightly caramelized.
  13. 13. Allow the grilled fruit to cool slightly, then toss them in a bowl and refrigerate for 30 minutes to let the flavors meld.
  14. 14. Serve the pasta bake hot alongside the chilled grilled fruit salad for a balanced and satisfying dinner.
