- 100 g Quinoa

- 1. Rinse the quinoa and red lentils thoroughly under cold water and set aside.
- 2. Heat oil in a large pan over medium heat and add cumin seeds, letting them sizzle for 30 seconds.
- 3. Add chopped onions and sauté until golden brown, about 3-4 minutes.
- 4. Stir in chopped tomatoes, turmeric, coriander powder, chili powder, and salt, cooking for 3 minutes until softened.
- 5. Add diced carrots and green beans, stirring well to coat with the spices.
- 6. Pour in the rinsed quinoa and lentils, mixing to combine evenly with the vegetables.
- 7. Add water to the pan, bring to a boil, then reduce heat to low and cover with a lid.
- 8. Simmer for 15-18 minutes, checking occasionally, until the quinoa and lentils are cooked and water is absorbed.
- 9. Fluff the pilaf gently with a fork and garnish with freshly chopped coriander leaves.
