  • 100 g Diet Tofu Masala Tofu
  • - Frozen Mixed Vegetables

Instructions

  1. 1. Rinse the rice under cold water and cook with 250 ml water until soft and fluffy, then set aside.
  2. 2. Slice the tofu into cubes and pat dry with a paper towel to remove excess moisture.
  3. 3. Mix the cornstarch, turmeric, and a pinch of rock salt in a bowl, then coat the tofu cubes evenly in the mixture.
  4. 4. Heat 1 tbsp sesame oil in a pan, add the tofu, and fry until golden and crispy on all sides; remove and set aside.
  5. 5. In the same pan, heat another tbsp of sesame oil and sauté the scallions until fragrant, about 2 minutes.
  6. 6. Add the frozen mixed vegetables and stir-fry for 5 minutes until they are tender but still crisp.
  7. 7. Toss in the soy sauce, ginger powder, chilli pepper, star anise, and black pepper, stirring well to combine.
  8. 8. Remove the star anise after 2 minutes of cooking to prevent overpowering the dish.
